We all know how important it is for our health to eat a balanced breakfast, but it can be tough to sneak in a quick bite before our busy days get started. We’ve been making these simple and healthy Breakfast Cookies here at Crofter’s for a delicious boost of energy to kick-start those hectic mornings.
You can keep these cookies in the fridge for a few days or put them in the freezer for those days when you need to eat something quick and convenient.
A couple of tips:
- Let these puppies cool down completely before you try to handle them. They will fall apart if they’re still hot.
- Don’t be afraid to add more fruit spread if they’re not sweet enough for you. The first time we made these we only used about 3 tablespoons of fruit spread and they were lacking in the sweet department.
- Try it with different Crofter’s Organic Premium Spreads. We used Berry Harvest, but it would be great with any of our fruit spreads.
Here are the ingredients and step-by-step instructions for making the breakfast cookies. (printable recipe is available at the end of the post)
2 cups of Oats
½ cup of Crofter’s Organic Premium Spread of your choice
½ cup of nut butter (your choice)
1 scoop of protein powder
1 tablespoon of baking soda
Pinch of sea salt
Dash of cinnamon
1 egg
½ teaspoon of vanilla
3 oz of dried fruit or chocolate
Instructions:
1. Heat oven to 350°F
2. Mix together dry ingredients and dried fruit
3. Mix in egg, nut butter, vanilla and ½ cup of Crofter’s Premium Spread of your choice
4. Spray a cookie sheet with olive oil or non-stick spray
5. Shape the dough into 6 large cookies and place them on cookie sheet
6. Cook for 10-12 minutes then let them cool before serving or handling
